#BaptistHealthy Easy Eats: Heart of Palm Salad

Prized for its culinary versatility, heart of palm is both refreshing and filling, and may help prevent overeating.  Served as an appetizer or side dish, this vegan recipe is healthy, low in calories, inexpensive and convenient to add to salads, any meals, or enjoyed as a healthy snack

Heart of Palm Salad

(Makes 2 servings)

Ingredients:

  • One 14 ounce can of hearts of palm
  • ½ cup of diced tomatoes, peppers and onion
  • Juice of 1 lime
  • 1 bunch cilantro
  • Dash of salt

Preparation

  • Chop all ingredients into bite size pieces.
  • Combine all ingredients
  • Enjoy!
